The Cidery is more than just a production facility; it's a laboratory of creativity where the champagne method is experimented with to create sparkling ciders, and where small fruits are combined with apples to enrich the complexity of flavors.

Loïc has integrated refined techniques from champagne production, adapted to cider, to reveal a rich and complex aromatic palette. This fusion of tradition and innovation is evident in every bottle, whether it's a natural sparkling cider, a spirit, or a finely tart cocktail prepared with the utmost care.

For summer, the cidery notably offers the Rosé Farmhouse Cider, a vibrant product made from red-fleshed apples.

The rich diversity of the Quebec climate bottled

Quebec enjoys an exceptionally rich climate. Our four seasons must be proudly showcased and reflected in every local product. The diversity of our temperatures, from summer warmth to winter chill, represents a true opportunity. While some producers elsewhere in the world must artificially recreate this winter chill to enrich their products, here, nature generously offers us this gift each year.

Here, the pressed apple in winter offers a slightly exotic caramelized side since it has frozen, thawed, and been sunburned. It's very Quebecois. For example, in the Quebec winter, we couldn't make our favorite product, Vermouth. It's important for us to use the uniqueness of the Quebec climate to create and produce products that reflect our beautiful territory.

When distilling, the temperature can rise to 30 degrees. We don't use dehumidifiers so it can get very humid in summer and that's what we're looking for, variations in humidity and temperature. That's what works, matures, and matures the alcohol.

The owners of Entre Pierre et Terre have fun and create with the nature and climate of Quebec. A beautiful reminder of the richness of our Monteregie lands and of our jewel that is Quebec.
